C*CreamTex 75720 is a stabilized and medium cross-linked tapioca starch which enhances the rich, full-bodied texture in pastry and dessert fillings. It was designed to provide the right balance between taste and creaminess. C*CreamTex 75720 provides excellent clarity, high water-binding capacity and stability at low temperatures, which is ideal for bakery applications. Product applications include chilled dairy puddings and UHT dairy puddings, frozen soups and sauces, and neutral sauces. The starch creates a full, heavy mouthfeel, a tender gel-like texture and has a very bland flavor. It has good resistance to shear and excellent freeze-thaw stability to withstand rigorous processing and shipping conditions.
