Reducing Listeria Contamination In RTE Meats

In this podcast, Lynn Knipe, extension processed meats specialist at Ohio State University, looks at a variety of processing interventions available to prevent Listeria monocytogenes contamination in ready-to-eat meat products. Listeria is a pathogen that can tolerate most processing and packaging environments. Interventions to inhibit its growth can include antimicrobial agents as well as antimicrobial processes. This podcast summarizes the advantages and disadvantages of the methods that are currently commercially available and introduces emerging intervention technologies that will hopefully be commercially available in the near future.
