The FT25BBP continuous margarine and shortening crystallizer, one of a range of modular scraped surface heat exchangers for use in the food industry, also handles confectionery fillings and aerated products. It incorporates one or two heat exchanger barrels and a pinworker to vary the crystal structure of the chilled product. The range gives great control and flexibility for processing oil emulsions, from low fat shortenings and soft spreads to margarine.

The unit is mounted on a stainless steel waterproof cabinet which houses all the services and the waterproof membrane technology control panel gives control over the process variables. Results can be recorded to a PC and replicated on industrial scale plant.

The unit's small footprint uses as little as ten liters of product an hour while providing enough information to scale up to larger plant. Full clean in place (CIP) is possible and the exterior can be washed down quickly, ready for the next formulation.
