The dry powder holds onto flavor better than oils or hydrocolloids, providing manufacturers with several advantages, both in processing and end-use attributes.
The powder easily blends with seasoning or flavor mixes and is applied to the snack or cracker like a typical seasoning. In use, the residual heat within a food as it exits an oven or extruder is sufficient to fully melt the powder's adhesive. Within seconds it forms a bond wit the food to ensure uniform seasoning coverage. Coated products can then be placed on a conveyor for packaging.
