Dry Seasoning Blend
World Wide Food Expo--Booth #1643--ChiliMax is a dry seasoning blend that may be used as a partial or complete replacement for standard chili powder. Because it contains no ground chili, this blend minimizes the agricultural variances typically associated with ground chili pepper, thereby offering more consistent costs, color and flavor stability.
The technology behind ChiliMax is based on two components: standardized color and flavor sources, plated on a carrier, and an antioxidant to preserve and protect the product from oxidation. In addition to the garlic powder and ground spices that are typical of chili powder, such as cumin and oregano, oleoresins of various spices in the capsicum family are incorporated into the blend. These are highly concentrated spice extracts that contribute a standardized level of color and/or flavor, as measured by ASTA methodology. MicroControl(r) Mustard, a proprietary specialty product, is the antioxidant found in ChiliMax. By harnessing the natural functional properties of mustard, it can be used as an antioxidant in seasonings, without affecting the flavor profile of the finished product.
