The technology successfully pre-freezes even difficult items such as soft, wet or sticky products, including shrimp, fruits and vegetables. A frozen crust covers each individual piece via immersion in a stream of liquid nitrogen at –196ºC (-320ºF) rather than via the liquid nitrogen bath used by competitive pre-freezers. The process preserves shape, flavor and moisture content through the finish freezing process and results in unsurpassed IQF food quality.
