A multifunctional product, the cellulose gel works as a thickening agent, opacifier and texturizing agent. It is Kosher-certified and shear resistant as well.
The cellulose gel provides a smooth, creamy texture to reduced fat and fat free salad dressings; opacity of reduced fat and fat free mayonnaise; creamier mouthfeel to processed cheese; and control of ice crystal growth in frozen desserts.
