Allied Custom Gypsum has been serving the food, beverage and pharmaceutical industries with Food and Pharmaceutical grade Calcium Sulfate for nearly 2 decades. Allied’s Calcium Sulfate, or more commonly known as “Terra Alba”, is produced by fine-grinding and air separating a select grade of high-purity white gypsum into a fine, free-flowing, odorless and tasteless white powder, as described in the 21 CFR 184.1230 (April, 2000), that meets or exceeds the specifications of the Food Chemicals Codex and the National Formulary. Allied’s Calcium Sulfate has been Kosher certified to be used in the manufacture and processing of kosher food products.

Food and Pharmaceutical grade Calcium Sulfate provides a cost-effective and bio-available source of supplemental calcium. Calcium Sulfate has long been used in the Baking industry as a dough conditioner, firming agent, anti-caking agent, leavening agent and dietary supplement in enriched flour and breads, yeasts foods, baking powders, cereals, and bread conditioners.

In brewing and other fermentation processes, calcium sulfate is utilized as a water conditioner providing permanent water hardness and as a needed calcium source to the brewing yeasts, allowing for a paler, smoother-tasting beer with improved stability and shelf life.

Calcium Sulfate is also used in canned vegetables, artificially sweetened jellies and preserves, and as an extender and supplier of dietary calcium in specialty milk and milk substitute products. The Tofu industry uses Calcium Sulfate not only as a bio-available calcium source, but also as an aid in the gelatinization of the soy protein.

Pharmaceutical applications utilize calcium sulfate as a dilutent serving as an excellent inert extender while it supplies dietary calcium.
