Sigma, Idromix And The Innovation Of The Food Industry

Recently the company presented two new machineries, both covered by a worldwide patent: Idromix and Aeromix; Idromix is a device for the instantaneous and continuous mixing of powders and liquids for rotational pulverization in a descending flow which won the prizes „Innovations“ and „Trophées Europain 2012“ at the International Exhibition Europain 2012 in Paris, as proved to be a machinery that represents the concrete evidence of a revolutionary concept for the bakery market. This invention, conceived entirely within Sigma allows the best hydration between flour and water during the first phase of the mixing, encouraging a strong union between solid and liquid particles.
Aeromix indeed is a line planetary mixers with exceptional features. With their outstanding speed ratio, they offer the best results both in terms of quality and hygiene, especially when used with whisks for the whipped products and with blades for emulsions, typical mixtures for pastry and gastronomy. What makes this machines unique and definitely more similar to mixers than to simple “planetaries” is the combined use of two tools: a very particular spiral that interacts with a second rotating tool. This second element has the task to contrast the action of the spiral, creating a double refining and a bigger airing of dough, thanks to its continuous division during its preparation.
