Flow behavior of liquid and semi-solid food materials is evaluated by measuring viscosity. Instruments are simple to operate and quickly give a number (in units of centipoise) that can tell the operator whether the product is "good to go." When the test fails, then fast action is needed on the production floor to bring things back into spec.
